Thermoduric Bacteria in Milk- A Review

نویسنده

  • Amitha Thomas
چکیده

Thermoduric bacteria are organisms capable of surviving the industrial pasteurization process of milk, and can carry over into product causing quality defects, or creating health hazards. The various species of genus Bacillus, Microbacterium, Micrococcus, Enterococcus, Lactobacillus and Corynebacterium are described as heat resistant species (Marth and Steele, 2001). A thermoduric bacterium in milk is significant due to their ability to survive the pasteurization temperature and subsequently carried to pasteurized milk. The organisms may cause loss of economy to the farmers by spoilage of the milk or may cause serious health hazards to the consumers.

Sensorial analysis of expressed human milk and its microbial load.

OBJECTIVE To verify the existence of a relationship between presence of off-flavor and microorganism load in quality control rejected samples of expressed human milk from a donor milk bank. METHODS A total of 30 samples of expressed human milk with off-flavor were tested for the occurrence of the following microorganisms: aerobic mesophilic, psycrotrophic, proteolytic, psycrotrophic proteolyt...

Efficiency of cleaning procedure of milking equipment and bacterial quality of milk

The cleaning and sanitation of milking equipment could be consider a critical point in the milking procedure because a cleaning failure could influence the level of bacteria contamination of bulk tank milk. Aim of the study is to monitor the cleaning procedures of milking systems in 7 dairy cows farms in Lombardy and to find a relation between efficacy of cleaning system and the bacterial quali...

The complex microbiota of raw milk.

Here, we review what is known about the microorganisms present in raw milk, including milk from cows, sheep, goats and humans. Milk, due to its high nutritional content, can support a rich microbiota. These microorganisms enter milk from a variety of sources and, once in milk, can play a number of roles, such as facilitating dairy fermentations (e.g. Lactococcus, Lactobacillus, Streptococcus, P...

Some studies on microbacteria from Iowa dairy products.

Microbacteria have attracted attention because they are among the most heat-resistant, non-sporeforming types of bacteria found in dairy products. As they grow poorly, if at all, at 37 C, they usually were overlooked when the standard plate count procedure called for incubation of the plates for 48 hr at that temperature. However, they form small colonies when incubation temperatures of 32 to 3...

Methods for Interpretation of Bulk Tank Cultures and Udder Hygiene Tests for Diagnosing High Bacteria Counts: Or, a High Lpc Count Is Not Always a Cleaning Failure

This method relies on the RELATIVE COMPARISON between numbers to formulate a diagnosis. (Examples of this are presented in the appendix). The most common misapplication of the method is the formulation of a diagnosis based on only one of these numbers without considering the relative values of the others (a high LPC count does not always indicate a cleaning failure). As indicated in the interpr...
